We had this at Stacey's last week and it was delicious (even though I am not a huge dill fan). She said it is incredibly easy and quick. Enjoy!
4 boneless, skinless chicken breasts halves
1 tsp lemon pepper
1 tsp salt
1 tsp dried dill weed
1 tsp garlic powder
3 Tbsp butter
1/2 c whipping cream
2 tbsp capers, drained and rinsed
Season chicken breasts with lemon pepper through garlic powder. Melt butter in a large skillet over med. heat. Place breasts in skillet and increase heat to med-high. Turn chicken frequently to brown, then reduce heat to med and cook 5 - 7 minutes or until cooked through. remove chicken to serving platter and keep warm.
return skillet to stove and increase heat to high. Whisk in cream, whisking continually until reduced to sauce consistency (approx. 3 min.) Remove from heat. Stir in capers. Pour sauce over chicken and serve. Very good over pasta, but I bet rice would be great too!
